Welcome to sushi time with Candy

Go to rear of store for fish counter



You can buy pre-cut and packaged sashimi



or




They sell larger pieces of fish that you can cut yourself (tuna, salmon,yellowtail)




I prefer Japanese cucumbers for their lack of water, however Persian (pictured) are fine. Avoid regular cucumbers as they are too watery.


Vinegar powder for sushi rice

Can crab for Cali roll mix, make sure it is lump white meat crab

Unagi sauce


Make sushi rice according to directions. Place HOT rice in large shallow bowl. Sprinkle vinegar powder on rice while STEAMY. Mix rice and powder alternately as you go, to taste. Between mixing and sprinkling you must fan rice to cool it. Make sure powder is fully incorporated. Make sure rice is COMPLETELY cool before using.



Cut cucumber and avocado and place on serving place. Cover to prevent avocado from rusting.


Mix can crab, salmon roe and mayo (Cali roll mix). Should be similar consistency to tuna salad. You can add a little cucumber or green onion if desired.

Place in bowl next to avacado and cucumber plate

Purchase dried sushi seaweed. It comes precut in squares. Additionaly you'll want to cut in 1/2 creating a rectangle. Spread COMPLETELY COOLED vinegar seasoned sushi rice in the middle of the seaweed.



Spread Cali roll mix on top of rice



You can cook the unagi according to instructions to add to your sushi roll.




Top with unagi sauce




At this point you are simply assembling your sushi hand roll. It won't look pro, but it'll be gone before you know it. Usually we place all the individual ingredients on our table and everyone assembles their own. Kinda like how you make tacos. The Cali roll mix is considered GOLD, so make plenty as it is sure to go first.




This is more family style sushi.

Don't forget your soy sauce, wasabi and any other favorite condiments. You can add anything you'd like. We have used tempura or scallops inside the rolls too.
